Sponge Cakes is an online UK cake company that was founded back in 2009, previously they used to sell cakes in their Byfords cafe since 2000. It’s whilst still at their Byfords cafe that they realised they needed to think big and thanks to the positive feedback from their unsuspecting customers they took a leap. Byfords cafe transformed into Sponge and today the company creates and sells a variety of delicious, mouthwatering and flavourful cakes from their bakery based in Holt.
As a cake addict, I was elated when Sponge cakes reached out and asked if I would like to review one of their cakes. I couldn’t accept fast enough as I love cake and browsing through their website I was happy to learn their cakes both standard and bespoke cakes are hand-made. The variety of the cakes truly blew my mind, I struggled to choose just one until I learned they made ‘sharing cakes’ and I knew I wanted one of the sharing sponge cakes.

When I was young, my mum used to bake cakes almost on a daily basis as her side business, which meant every day I had cake in some shape. I grew up with such a huge sweet tooth and an addiction to Victoria sponge cakes and to this day its my favourite type of cake. When the collaboration e-mail landed in my inbox, I had hoped it was cake and was so glad that it was and now I have cake for days.
Because I grew up eating homemade cake as a child, I have quite a judgemental tongue and it takes a lot to please me. For me, a cake is not just cake, it is my first love, my ultimate dessert that I can eat alone without any guilt for the amount of sugar I consume. What I have noticed a lot in the UK is that most cakes have cream frosting which is something I love to hate but Sponge Cakes fell in the love camp.

There are so many things to love about Sponge cakes, the cakes were soft, delicious but firm at the same time. I am blown away by the sharing cake because it’s not something common but something that I absolutely loved. The sharing cake I chose was the summer sharing cake, limited edition, 4 big slices in different flavours to feed 8 people. The 4 flavours are based on the popular summer cocktails; espresso martini, strawberry swirl, pina colada and gin & tonic.
I love a good cocktail like the next person but I struggled to choose just one slice so I decided I would try all 4 slices. In the end, I realised I liked the Pina colada more than the other flavours with the espresso martini being the least favourite. Mostly because I am not big on martini but I still managed to polish the cake off within a week of receiving it. It is recommended that the cake is consumed within 7 days in an airtight container but can be frozen for up to 6 months.

We absolutely loved the sharing cake we received and can not recommend Sponge Cakes enough, its a great company, makes home-made delicious cakes and will have them to you in no time. Whilst the summer sharing cakes is no longer available, there are various cakes that you can order.
