As I enter the final year of my 30s, I thought I s As I enter the final year of my 30s, I thought I share with you some pictures of mine at 9 months, 9 years, 19 years, 29 years  to today 39 years old of age. Looking back at each decade, I feel both ‘older’ and ‘younger’, I see the change in my features, the change in my way of life, the change in my personality and the experience itched on my face. I am grateful for the life I have lived thus far and excited for the life I am yet to live.

2026 - 39, (Home, England), I am ready for this final year before my 40s but also ready for this next decade. 
2016 - 29, (Oslo, Norway), this decade was about self discovery and building the life I dreamt about. The life that I am super proud of and truly grateful to be living. This decade, I built my financial life and in later years choose to heal from the trauma gained in the last decade and now I feel well equipped for the future. 
2006 - 19, (Glasgow, Scotland), I thought I was grown (look at the cheekbones 🤣🤣) and ready for the world, chiiiild was I wrong, let’s just say, I am still resolving the trauma the decade brought me but I am grateful because I met my best friends and made decisions for the future I wanted to have. (Spoiler alert - I did better than I dreamed). 
1996 - 9, (Home, Zambia) this was my birthday but my little sister insisted she had to be the one in the middle. The only way we knew whose birthday it was, was by standing in the middle but this year I remember baby sister crying her eyes out and refusing 🤨
1988 - 9 months, (Chililabombwe, Zambia) although my mother looks tired and traumatised😟, I know I was loved and happy.

How to make Cod Ceviche by Fishmas

Fishmas is a twice-weekly culinary celebration celebrated by Icelandic people and I am celebrating by learning how to make Cod Ceviche by Fishmas themselves. With the festive celebrations only a few weeks away, I thought I share a different way you can celebrate the festivities this year with Fishmas. Although I am learning how to make Cod Ceviche (by Fishmas), this dish is best enjoyed during the warmer months as its a cold dish that is easy to make and tastes absolutely delicious.

Iceland is well known worldwide for its incredible oceans, their long tradition of sustainable fishing and for their state of the art processing pieces of equipment and makes them the envy of the fishing world. Fishmas is one of their lesser-known celebrations and this year, they are working to bring awareness to Icelandic seafood and position themselves as the preferred choice of imported seafood. I am doing my bit by learning how to make Cod Ceviche by Fishmas using imported Cod.

How to make Cod Ceviche by Fishmas

Icelandic people are fishermen and are one of the best in the world, so it’s not surprising that they have a twice-weekly tradition where they celebrate the fresh fish caught from their shores. Personally, I consume more fish in my diet than red meat or vegetables, I am a sucker for a good cod or tilapia kind of fish. Even when I was young, I had more preference for fish dishes than red meat and this preference has continued into adulthood.

Growing up in Zambia, we ate a lot of fish called bream and my favourite way to prepare it was frying. Over the years I have experimented with grilling, boiling and baking but frying is still my favourite way to cook whole fish like tilapia or bream. When it comes to cod, haddock or salmon, these types of fish I prefer to bake in a foil paper with some spices and enjoy with a simple dish. As a sushi lover, I was delighted to learn I can consume cod in an uncooked manner as part of the cod ceviche dish and its heaven.

Ingredients for Cod Ceviche

  • Cod 200g – cut into small pieces
  • Fresh Salad
  • Spring onion 60g
  • Sea salt 10g
  • Coriander 5g
  • Half chopped orange
  • Zest and juice from 1 lemon
  • Zest and juice from 1 lime
  • Zest and juice from 2 oranges
  • Finely chopped shallots – 100g

When it comes to making the Ceviche, it’s very easy, mix all the ingredients in a bowl and refrigerate for at 2 hours. The Cod Ceviche is a simple dish to make but its one I think its most suitable for warmer weather as its a cold dish but as a fish lover, its an all year round dish. If you are someone who wants to add a fish dish to your healthy eating meal plan then I highly recommend this Cod Ceviche. All the ingredients from this dish was purchased in Waitrose where you can find this Icelandic cod that is freshly imported.

Fishmas for Christmas

Prior to this collaboration I had not heard of this concept of Father Fishmas but as a fish lover I was quickly drawn in and read up on this. My entire family loves fish but we have all been sucked down the tunnel of its either Turkey or chicken for for Christmas but this year, we are adding fish to the menu. Fish is not only good for you but fish dishes are often so easy to make and very quick as well. I hope you have also been able to learn how to make Cod Ceviche and will add this simple dish to your Christmas table and spruce things up.

This year Christmas will be a little different, some might not be meeting up with their families, some will spend it alone and many don’t know yet. Whichever category you fall in, I hope you remember everyone who might be experiencing a different type of Christmas this year and support others where you can and enjoy fishmas.

    This sounds delicious and a great new way to use fish! Love the idea of adding fish to the Christmas table too. As a family we don’t really eat a lot of fish but it is something I have been trying to include into our meals a little often, the kids loved the fish pie I made recently!

    I do not eat a lot of fish but I do eat cod, I will have to try this recipe out, is the cod raw as I would have to cook it first I think but am sure it would be just as nice
